How To: Make a Fresh Fruit Salad Dressing!

Does your everyday salad need a boost? Dress it up with the flavors of summer.   Sweet Peaches, Strawberries and Blueberries are at their seasonal peak and our main ingredient in today’s recipe.  Qué rico!

A fresh fruit dressing adds color, life and dimension to any salad.   Fresh fruit provides a healthy boost with a sweet touch to contrast your savory salad ingredients.

A 5 minute simple base of blended fruit, lemon and balsamic vinegar combine with olive oil give your weekday lunches a makeover.

Yes 5 minutes, which mean in 15 minutes you can 3 colorful dressings stashed away in your fridge.  Ready to pack for work, a quick lunch at home or a great side salad for dinner guests — because we know, mujer, that life is busy.

Balsamic vinegar gives the fruit a deep roasted oven flavor while the lemon add s a touch of zing.  Slowly drizzle in your olive oil as your blender or food processor churns and taste for seasoning.

Fresh Fruit Dressing

1 cup fruit,  diced  (strawberries, blueberries,peaches)

4 tbsp olive oil

1 tbsp balsamic vinegar

1/4 tsp lemon zest

2 tbsp lemon juice

1 tbsp agave

1/4 tsp salt

1/4 tsp pepper

In a food processor or blender combine fruit, balsamic vinegar, lemon zest, lemon juice and agave.

Pulse or blend until smooth.  Strain if desired.  Return to blender or food processor.

Blend and slowly stream in olive oil. Taste and season with salt and pepper.

*Store in fridge for up to 1 week.

*Dressing will thicken in fridge.  Thin out with a little water.
